This morning I was looking for my box of store bought pancake mix and realized I was out! I searched through several recipes to see what all went into making your own and realized that it only took a few basic ingredients, all of which I had on hand!
2 cups whole wheat flour
3 tbsp brown sugar (honey may be good, too!)
2 tbsp baking powder
1 tsp salt
2 eggs (beat them first)
1 3/4 cup of skim milk
2 tbsp melted butter
2 tbsp grapeseed oil
1 tbsp vanilla extract
3 drops Cinnamon Essential Oil (or a good shake of ground Cinnamon!)
2 drops of Lemon Essential Oil (or a splash of Lemon Juice)
1 cup Blueberries (optional)
Stir dry and wet ingredients together separately. Slowly add wet ingredients to dry ingredients. Add essential oils (or their substitutes) once everything is combined. (1 drop of the Lemon goes in the blueberries!)
Mix together about a cup of blueberries with 1 tsp of flour, 1 tsp honey, and 1 drop of Lemon EO. Stir together until combined. You can mix them into the batter, but so they don’t turn the pancakes blue, I drop them on the batter once they’re in a warm pan!
Cook on medium heat for a few minutes on each side. When they start to bubble, they should be ready to flip! I added a splash of grapeseed oil to the pan and used a barbecue brush to evenly distribute it. I drizzled honey onto mine after they were finished and my husband ate them drowned in butter and syrup. Really tasty!
This made about 16 regular sized pancakes total. I like to cook big batches of them and then reheat them later for easy breakfast’s on the go.
I’m planning on making a big batch of the dry ingredients to keep on hand since it was so easy. Plus I love being able to use my own ingredients so I know what goes in them! Now to find a cute mason jar container to keep them in…
